What will happen to old outlook emails once email accounts have transferred?

We re in the process of moving over to Office 365 (non-profit version) and need to understand what will happen to old Outlook emails once the email accounts have been verified and transferred over?

Also what will happen to those using non-outlook emails (like Mail for Macs, etc)?

Inexperienced newbie here, scared we will loose all old emails....
