I agree that your plan will work fine. However, we still need two different Office products to perform such deployment. Compared with the standard Office 2013, O365 ProPlus offers more convenient methods like Click-to-Run to simplify deployment process. Shared Computer Activation is recommended to meet your need, which is similar to your customer's. It just uses Office 365 ProPlus , which might make it simpler to be deployed. Every user has his own account can prevent files from being interfered.
